Today Soeri and his KIGA group are celebrating their carnival party. So, no lunchboxes today. They will be becoming a carnival breakfast and in the afternoon I have organized carnival specialties called Berliner for the entire group.

These are doughnuts filled with strawberry jam. The little ones are really yummy and my favorites. They are filled with something similar to cream cheese called Quark.

Instead of the lunchboxes I am leaving a great recipe for homemade Berliners!

As they say here in Germany during carnival "Helau!"



Ingredients

15 g Yeast
1/8 liter Milk
250 g Flour
25 g margarine
1 Egg
Lemon aroma
6 teaspoons Strawberry jam
30 g Icing sugar
1 tablespoon cold water


Dissolve the yeast in luke warm milk. Add the flour, margarine, egg, a pinch of salt, and a few drops lemon aroma in a mixing bowl and beat with a kitchen machine. While beating slowly add the yeast-milk. If needed add a little more flour. Cover the dough and let stand in a warm place until it has doubled. Form 6 round balls and press gently to flatten it slightly and place on baking paper.

Heat the deep fat fryer to 165° Cand take out the basket. Add the Berliner in 2 portions into the basket and fry for 2 minutes, take out, turn and bake for another 2 minutes. Take out and let drip on kitchen paper.

While still hot sprinkle icing sugar (you can also use normal sugar) over the top. Fill the jam in a piping bag and fill the Berliners with this.

Bagels & Pineapples

Bagels are now becoming more and more popular here in Germany. So much so that it is quickly taking over the French croissant and the Italian ciabatta!

Morning Snack:
Today I decided to give Soeri a taste of his first Bagel. I toasted it in the toaster and spread his beloved cream cheese over it. I then spread a thin layer of honey over the cream cheese.
Last night we cut up a real sweet and juicy pineapple and he got a nice box full for the snack box. He normally drinks the Actimel at home for breakfast, but as he wanted herb tea today, I put the Actimel in his snack box. As a treat he got some of those delicious and sweet dried cranberries.

Afternoon Snack:
As his morning snack was pre-dominently sweet, I decided to give him some Tuc crackers spread with (what else) cream cheese and a chunk of butter cheese Bonbel. Half a banana and 100% fruit mousse - Apple/Strawberries, tops off the afternoon snack box.

As I will be picking Soeri up at 12 pm again today he only gets one snack box.

At our great bakery we get a great bread every Thursday. This bread is so famous that it has a name: Bernd the Bread! Hey and believe it or not this bread has his own show on the kiddies channel here in Germany! It tastes delicious. Made from whole wheat and rye it also contains flax seeds, sunflower seeds, sesame seeds and oat flakes (see pic below).

Today Soeri got ham and cheese sandwiches. I decided to leave the crusts on as they do taste great. Normally he is picky and does not want to see crusts anywhere! I spread his favorite cream cheese first then a slice of Gouda low fat cheese and low fat ham. A bit of fresh crunchy lettuce topped it off. I cut them into triangles, held them together with a toothpick and decorated with juicy cherry tomatoes. I had bought some organic snow peas and just steamed them for a minute, quickly cooling them in ice water so they stay that fresh green and crunchy.

Alternative: Instead of lettuce you can also use Rucola. It gives the whole sandwich a nutty taste.

He got chunks of juicy and sweet honey melon. He loves Melon. As a little treat I put a mini Hanuta, which is chocolate nougat cream with hazelnuts in between two wafers.

Fruit Salad and Finnish Bread

Morning Snack: I made up a new sandwich filling today and it was a real hit. I bought half a ready grilled chicken from our local rotteserie. After peeling off the skin and picking out the meat I diced it in relatively small pieces. To this I added half a jar of organic vegetarian pasta sauce. Those living in Germany: Alnatura-Vegetarisch Bolgnese. This is so delicious and has huge chunks of bell peppers, zucchini, onions, carrots, mushrooms and tomatoes. Not to mention the tasty Italian herbs to add to the Mediterranean taste. I also added some chopped spring onions.

I toasted whole wheat Finnish bread, spread it with a thin layer of cream cheese and spread the Mediterranean chicken on it. To this I added a few rucola leaves. Yummy!

I also made a nice fresh fruit salad with apples, bananas, yellow kiwi, blood oranges, grapes and dried cranberries. I was so happy to find these in our store today as these dried cranberries are real multi-talents. Not only do they add to the tangy taste of the fruit salad but you can use these as an alternative to raisins in baking or just to snack on.

Afternoon Snack: Contains a raisin bun spread with butter and the last of my apple mousse. Today I added a bit of vanilla yoghurt on top of it.

I have been inspired by The Vegan Lunch-box to get this blog going. I know from a lot of mums that they are always looking for new, creative and nutritious snacks to go into kiddies lunchbox everyday. Not time consuming but they have to be tasty, right?

We are not a vegan household but try and eat healthy and well balanced meals. Of course we all sin every now and then;-) My little 3 year old Soeri (Soeren) loves to eat but can be picky.

Here is my first post:

My first two lunchboxes contain:
Morning Snack: Tasty rye bread with cream cheese, a slice of turkey breast and slices of full boiled egg. To go with it I cut up some carrots and a chunk of cheese. The apple mousse I make by peeling and grating sweet apples. Add a small squirt of lemon juice so it does not turn too brown.
Afternoon snack: Juicy orange wedges and a mini chinois.

The idea behind these Daily Tiffin bits is not only to give others ideas, but also to get feedback from others. What could I do better or what other suggestions do you have? This could turn out to be quite helpful as it could be a means to swap ideas and try out new lunchboxes.
