Today Soeri and his KIGA group are celebrating their carnival party. So, no lunchboxes today. They will be becoming a carnival breakfast and in the afternoon I have organized carnival specialties called Berliner for the entire group.
These are doughnuts filled with strawberry jam. The little ones are really yummy and my favorites. They are filled with something similar to cream cheese called Quark.
Instead of the lunchboxes I am leaving a great recipe for homemade Berliners!
As they say here in Germany during carnival "Helau!"
Ingredients
15 g Yeast
1/8 liter Milk
250 g Flour
25 g margarine
1 Egg
Lemon aroma
6 teaspoons Strawberry jam
30 g Icing sugar
1 tablespoon cold water
Dissolve the yeast in luke warm milk. Add the flour, margarine, egg, a pinch of salt, and a few drops lemon aroma in a mixing bowl and beat with a kitchen machine. While beating slowly add the yeast-milk. If needed add a little more flour. Cover the dough and let stand in a warm place until it has doubled. Form 6 round balls and press gently to flatten it slightly and place on baking paper.
Heat the deep fat fryer to 165° Cand take out the basket. Add the Berliner in 2 portions into the basket and fry for 2 minutes, take out, turn and bake for another 2 minutes. Take out and let drip on kitchen paper.
While still hot sprinkle icing sugar (you can also use normal sugar) over the top. Fill the jam in a piping bag and fill the Berliners with this.
